Copycat Noodles and Company Recipe!

Ask Noah what his favorite food is and he will say Mac and Cheese...
 ask him where his favorite place to eat mac and cheese is and he will say Noodles and CO.
The pictures are a bit dated (taken on his 2nd birthday) but the appreciation level is still the same!
I too enjoy a good bowl of noodles from Noodles, although my favorite dish is the Whole Wheat Tuscan Linguine...
And since it is a relatively basic dish, I decided to see if I could make it at home!
What you will need:
1 box of whole wheat or whole grain linguine
1 head of broccoli
1 red pepper
1-2 cloves of garlic
1 red onion
1 cup of sliced mushrooms
My attempt was devoid of mushrooms simply because I didn't have any on hand...
You will also need 3 tblsp of white wine vinegar...
and about 1/4 cup of white wine...
If you would prefer not to use wine you can use a little more of the white wine vinegar and add a Little of the starchy pasta water.
1tsp salt
1-2 tsp ground black pepper
3 tbsp cream
Ok, to begin, get your pasta water salted and once it's boiling, toss in the linguine...
heat your oil on medium and toss in your red onion and red pepper...
Once the pepper and onion has begun to soften, add your garlic and broccoli (and your mushrooms if you have them) add the salt and pepper as well....
Pour in the vinegar and wine and allow to simmer...
Once everything has simmered together and before you add the pasta, pour in a splash, about 3 tbsp of cream.
Add that pasta and serve!
But wait!  Where is the Parmesan?!
Ahhhh, that's better!

  1. What a beautiful presentation this makes! (Change the noodles to brown rice, add some chicken, and I'm totally sold!)
